Monmouth Co-op: Happy Newest of New Years!

It's January, you know what that means ... Brrrrrrrrrrrrrrrrr!

Time to warm up ‘them bones’ with some warm, cozy, DELICIOUS crock pot eats!

 

Something that we love to make in the crock pot that utilizes many of the vegetables that cross our path here at Monmouth County Organic Co Op is VEGETARIAN CHILI

 

CROCK POT MEGA VEGGIE CHILI DUMP ‘N’ GO

 

Ingredients:

 

The main stars of the show:

  •  onions - white, red, or both

  • bell peppers (any combination of colors)

  • as many types of mushrooms as you can muster

  • zucchini

  • broccoli

  • carrot

  • celery

  • sweet potatoes

  • white potatoes

 

**A personal favorite: Jerusalem Artichokes a.k.a. sun chokes. *Slow cooking helps break down the inulin and thus making the sun chokes more digestible

 

  • kidney beans

  • black beans

  • pinto beans

 

**Canned beans are best for this recipe. Dried beans are not recommended to be placed directly into the slow cooker without par boiling, as they contain high levels of phytohaemagglutinin, a lectin that can make you sick.

 

Can of fire roasted diced tomatoes- or Ro Tel brand diced tomatoes & green chilies

 

The spicy sidekicks:

 

  • cayenne pepper

  • ground cumin

  • garlic powder

  • chili powder

  • smoked paprika

  • salt and pepper 

 

 

The optional extras:

 

  • sour cream or Greek yogurt to top

  • tortilla chips for scooping

  • avocado for top

  • chopped fresh tomato for top

  • diced scallions for top

  • cilantro for garnish

 

The final bow:

 

  • fresh lime juice

  • hot sauce of choice

 

Instructions:

 

  • In a slow cooker, first add canned tomatoes and their liquid to the base

  • Combine any combination of the main stars of the show and the spicy sidekicks- a little of this, a little of that

  • Cover and cook on LOW for 6-7 hours - a.k.a. Dump n Go

  • Add optional extras per bowl, to each person's liking

  • finish it off with lime juice and hot sauce
