It's that time of year when plants really begin to grow – the warmth of spring turns our thoughts to what may pop up from those delectable gardens.
Presenting: Carrot Breakfast Two Ways – Party of One

Prepared the Night Before:
Carrot Cake Overnight Oats - Prep Time- just FIVE MINUTES
Equipment Needed:
· One Mason Jar
· Box cheese grater (use for grating carrots)
Ingredients:
· 0.5 cup rolled oats (our co-op has this!)
· 1 teaspoons cinnamon
· 0.5 teaspoon pumpkin pie spice
· 0.5 teaspoon nutmeg
· 0.5 cup grated/shredded fresh carrots (our co-op has this, too!)
· 1 tablespoon maple syrup (yep, you guessed it, co -op)
· 1 cup almond milk
· 1 tablespoon raisins or dried cranberries (co-op's got 'em)
· 1 tablespoon shredded unsweetened coconut
· 1 tablespoon crushed walnuts (one more ingredient straight from the co-op)
Instructions:
· Pour all ingredients into a mason jar.
· Seal the lid. Shake.
· Place in Fridge overnight.
· Next morning, can be served hot or cold.
Prepared the Morning of:
Carrot Juice Smoothie
Prep Time: just FIVE MINUTES
Equipment Needed:
· high powered blender
· cheese cloth or thin dish towel
· mixing bowl
· ice cubes (optional)
Ingredients:
· 2 cups fresh carrots. (We prefer the ones from our co-op – check us out!)
· 1.5 cups water – *for a tropical twist you can use half water and half pineapple juice
· 2 large bananas, peeled and frozen
· 1 cup fresh pineapple (Monmouth County Organic Co Op preferred)
· 0.5 tablespoon fresh ginger, peeled (yep, co-op has this, too!)
· 0.25 teaspoon ground turmeric (can substitute with cinnamon if needed)
· 1 tablespoon fresh lemon juice (we prefer the fresh lemons from our co op)
· 1 cup unsweetened vanilla almond milk
Instructions:
· To make the carrot juice. Blend carrots, water, and/or pineapple juice in high powered blender
· Drape cheese cloth or thin dish towel over a large mixing bowl, pour blended mixture into bowl
· Discard the pulp (or save for muffins later!)
· Set aside
· Blend all other ingredients in blender until smooth. The frozen bananas should give a bit of a slushie consistency
· Add carrot juice and blend all together
· Can add ice if desired.
