Another Monmouth Co-Op Recipe

One of Monmouth County Organic Fruit and Veggie Co-ops most recent deliveries included kohlrabi - a unique looking cruciferous vegetable.

Co-op Member Nancy Conn-Levin researched and adapted her own version of this recipe from what she found over at Food Network Kitchen.

Roasted Kohlrabi

  • Peel kohlrabi

  • Cut into medium-sized cubes

  • Toss with olive oil, salt, black pepper, and a small pinch of cayenne pepper

  • Roast at 450 degrees, stirring every ten minutes for 30 minutes or until tender and golden color

  • Dust the top with parmesan cheese and freshly chopped parsley

  • Serve hot!
